Fresh Blueberries are in season so that means I have to make one of my son's favorite pies.
Blueberries are not only tasty but healthy too. This Blueberry pie makes an easy homemade pie filling that is delicious. The steps are easy and soon you'll enjoy your FRESH BLUEBERRY PIE!!
Ingredients for Fresh Blueberry Pie
Baked Pie Crust

Fresh Blueberry Pie
1/4 Cup Water
4 Cups Blueberries
1 Tablespoon Butter
1 Cup Sugar
3 Tablespoon Cornstarch
Dash of Salt
1 Teaspoon Lemon Juice
9 inch Pie Crust, Baked
Bring 1/4 cup water and 1 1/2 cup Blueberries to a boil. Cook gently for about 4 minutes. Add 1 Tablespoon Butter.
Mix together 1 cup Sugar, 3 Tablespoons Cornstarch and a dash of Salt. Add this mixture to a hot Blueberry mixture. Cook slowly until think and clear. Remove from heat and add 1 teaspoon Lemon juice. Put 2 1/2 cups Blueberries in the bottom of a baked 9 inch pie shell. Pour hot blueberry mixture over and gently mix. Refrigerate OR leave at room temperature.
