Country Club Yellow Squash

Country Club Yellow Squash Recipe...Delish!!

The ingredients that you'll need to make Country Club Yellow Squash (onion not pictured):

Chop yellow Squash and Onion add then to pot of water and boil until fork tender.

Drain well and mash with potato masher

Put into baking dish and add sour cream

Add seasonings and MIX well

In another bowl combine bread crumbs, cheese, paprika and butter.  Mix together

Add to the top of the yellow squash and onion mixture

My all time favorite recipe for yellow squash is the gem that I found over 20 years ago.  As soon as my garden produces enough yellow squash this is the first recipe I make.  It is really nice at Thanksgiving dinner as well.  

Country Club Yellow Squash Recipe

8 medium yellow squash (large chopped)
1/2 cup Onion (large chopped)
1 (8 oz) Sour Cream
1/2 teaspoon Salt
1/4 teaspoon Pepper
1/4 teaspoon Basil
1 cup soft Bread Crumbs
1/2 cup grated medium-sharp cheddar cheese
1/3 cup melted butter
1/2 teaspoon paprika

Preheat oven to 300 degrees.

Wash squash and trim off ends.  In a large saucepan, Boil yellow squash and onions in salted water until fork tender.  Drain and coarsely mash using a potato masher.  Combine Squash and onions with sour cream, pepper and basil.  In a greased 2 quart oven proof casserole, pour in the squash mixture.  In a separate bowl, combine bread crumbs, cheese, butter and paprika.  Bake for 30 minutes.  Enjoy!!
