A Savory Soup that ALWAYS hits the spot!

The Ingredients needed:

Chop the carrots, apple and onion

Add to stock pot

Butternut Squash Puree that I had put in my freezer from the Fall.

Add Chicken Stock


Use an Immersion Blender to smooth out the entire soup

Top with Sour Cream

Butternut Squash Soup Recipe

4 cups Butternut Squash pureed
1 (32 oz.) Box or Can of Chicken Stock)
1 onion
1 apple (I use a tart Granny Smith apple)
2 carrots
4 oz (1/2 a brick) Cream Cheese cut into blocks
Salt and Pepper to taste
A dollop of Sour Cream to garnish

Rough chop onion and apple.  Peel and chop carrots.  Add to stock pot with a little Olive Oil.  Saute the onion, carrots and apple until tender.  Add Chicken Stock and Butternut Squash Puree and simmer for 30 minutes.  Add cream cheese and then use Stick Blender and puree the soup smooth.  Top with Sour Cream. Yum!
